Like I mentioned last time, I used one of Sweetnicks' recipes on Monday night. She had a recipe for applesauce cake, but I decided to turn it into cupcakes. Since I've never made this recipe before, I needed to taste it before giving it to my coworkers, and I didn't think it would look so good to bring in a cake with a slice missing. So I made cupcakes.
Applesauce Cake with Cinnamon and Brown Sugar Frosting

Cake:
1 cup all-purpose flour
1 teaspoon baking soda
1 teaspoon cinnamon
1/2 teaspoon ground allspice
1/4 teaspoon salt
pinch of ground cloves
1 stick butter, softened
1/2 cup brown sugar
1/2 cup sugar
1 large egg
1 cup applesauce
Frosting:
6 ounces brown sugar cinnamon cream cheese, softened
3 tablespoons butter, softened
3/4 cup confectioners sugar (more as needed to reach desired consistency)
1 teaspoon vanilla extract
Preheat oven to 350. Grease an 8 inch square baking pan. In a bowl, mix together flour, baking soda, cinnamon, allspice, salt and ground cloves. Add butter and sugars and beat well until fluffy. Add egg and beat until well blended. Add applesauce and blend well. Scrape batter into prepared pan and bake for 40 minutes, until toothpick inserted in center comes out clean. Let cake cool completely in pan. Make frosting: beat cream cheese and butter together until smooth. Add sugar and vanilla extract and mix until well blended. Spread frosting on cooled cake, cut and serve.
I later found that Sweetnicks also has recipes for applesauce muffins!

But I like cupcakes better than muffins ^^ I did stray from Sweetnicks' recipe in that I didn't make her frosting. I had cream cheese frosting left over from the last time I made cupcakes (yes, it was a long time ago but it was refridgerated and still good, I promise!) so I just used that. I was in the middle of watching TV while making the cupcakes, so I didn't even think about taking pictures. And then I forgot to bring my camera to work the next day TT_TT
Luckily, my co-worker had a camera that I could use. Unfortunately, it was so ghetto it didn't even have a macro setting (I didn't know there were cameras without that!). Following are the pictures that I took with the ghetto camera as well as with my cameraphone.

Since I still have all the ingredients (and I normally don't eat applesauce), I will probably make these again for this month's potluck. All my coworkers enjoyed them, as well as a couple friends that I met up with for dinner that night. The potluck is this upcoming Saturday, so look forward to a post next week about that! ^^
